Huge disappointment, lots of artifice and ultimately nothingness. Not a single dish was good, it was average and at times inedible, almost all the dishes were poorly seasoned, the balance or rather the imbalance of the dishes was very present, too salty, not salty enough, no textures, no surprises , 1 dessert was good without being exceptional either, in short a huge disappointment. Lack of humility of the manager and chef of the kitchen who presented us with the signature dish which was also without relief as the sauce was so sweet... At one point I actually wondered if someone in the kitchen wasn't sabotaging the dishes one after the other. An evening to forget

An exceptional and unforgettable experience. We discovered this restaurant after waiting months to get there and were won over by the place. The service was perfect, the menu was very intriguing and having the kitchen and the dining room without any separation is spectacular. The concept that the cooks themselves serve the dishes from time to time and that the chef makes himself available to also sauce the plates with the waiters is an idea never seen before but very impressive. The food and non-alcoholic drink pairing was also very good. A truly great restaurant!

This is a very special place, definitely top three restaurants I ever had the pleasure of dining. I regularly go on holiday in Switzerland and have been visiting the country for over 30 years now, but this is the first time I found a restaurant that perfectly captivates what Switzerland is all about. Several dishes (f.e. the signature one) transcended the concept of food. My sister and I agreed that when closing our eyes and tasting what was in front of us, we felt like we wire hiking in a forest, or a meadow. Very hard to describe, but for us who have lost their heart to the mountains, it was a fantastic experience. The staff was very professional but kind and warm. The sommelier guided us expertly through the véry extensive wine menu and made us excellent suggestions. Mr. Wassmer took the time to come over and ask us about our experience and he was genuinely interested. Overall, I would highly recommend this restaurant. It does what is says in the name and let's you go home with memories, new and fond ones.

I had already had the pleasure of tasting the refined cuisine of Sven Wassmer in December 2021 when it was still 2** Michelin but from October 2022 it received the well-deserved 3rd star, becoming part of the Olympus of three stars, thus bringing Switzerland, I believe for the first time, 4 three-starred. A very high percentage for a nation of only 8.5 million residents (the record still remains in Tokyo). Not that the third star has brought, in my opinion, substantial changes: exceptional today as it was a year ago. The 23 Riojas tasted were excellent, with 3 gems worthy of particular attention. Thanks to @aliciamettler and @mettlervaterlaus for the perfect organization and of course to @riojawein @rioja @rioja_alavesa @riojawine @winetoursrioja

We have visited 56 Michelin Guide-winning restaurants in the last 15 weeks. We were guests in 3-star restaurants 37 times and in 2-star restaurants 19 times. This includes all current 3 Series in NYC, London, Paris, Austria, Switzerland and Germany. One of the best menus we have had the pleasure of tasting in recent weeks. It was just great! The open kitchen is very impressive and really successful. We would like to come again. The resort also invites you to linger.

The best restaurant I have ever dined in. First class all the way. I dined alone and I had a lovely seat by the beautiful kitchen, seeing the gorgeous meals being prepared and having the opportunity to speak with Sven and all the other chefs. I had the 9 course meal complimented by their glass of wine recommendations for each dish. The presentation and taste were extravagant. I highly recommend Memories. We were guests at Sven Wassmer's MEMoRIES at the end of May 2022. We were completely thrilled. Incredibly attentive and friendly staff, you are treated like good friends. The open kitchen concept means you can watch the dedicated kitchen team at work. What they did was top notch. We enjoyed each of the 11 courses. Sven Wassmer personally welcomed and said goodbye to us. A thank you also to the sommelier Sebastian Stichter. Perfect wine pairing and expertly commented. We will definitely come by again.

This was our first dinner at Memories. We were warmly welcomed by the hostess who guided us at our table (perfect seating in my opinion, we had a panoramic view on the whole restaurant). The restaurant decor is close to nature, warm wood envelopes the room, gentle lighting strokes from the important chandelier which also reminds the branches of a tree. Intimate yet open. We felt instantly comfy. But let’s talk food! I had a 6 course surprise menu with wine pairing (but I skipped a few) and my fiancé got the 9 course also with wine pairing. We started with a glass of Champagne (I forgot the producer, sorry my bad) and the Snacks, a Sot-l’y-laisse combined with a small morel to dip into a joghurt and shio koji berries sauce picked on a little pine branch, followed by pickled baby beetroot with horseradish, then a mountain cheese tartelette topped with dandelion and finishing with a sourdough Gipfeli filled with hungarn mangalitza lardo and perigord black truffles. Simply delicious. First course was a fantastic angus beef tatar on a bergheu flan reminding base and an alpine essence broth (if I recall correctly fish based fumé). The next course was filling my taste buds with joy since we got an incredible mouth melting indigenous saibling (I have a predilection for this particular fish) bathing in a burned sennen cream, basil and fir taste. And yes we did spoon the sauce up with some bread! It’s would have been a crime not doing that. The wine pairing with a Completer 2017 was, in my opinion a match in heaven. The next dish was perfect pike perch from Lago Maggiore topped with kimchi, dipped in a seaberry and mussels sauce rounded with a subtle chili flavor. Next comes my second favorite dish. Some would say comfort food, if so I say bring it on every given Sunday. Knöpfli or Spätzli, roasted yeasts and a shower of Perigord black truffles. Gosh, that was extremely satisfying. That is we’re I had a short break. My fiancé continued with an imperial pigeon, with fried ramsons chips and garum (fermented fish sauce). The next dish was the main course. Here the focus lies entirely on the absolutely flawless quality of the meat, an extremely flavorful 8 year old cow filet with the ultimate potato mash à la Joël Robuchon (so yummie) and a classic intense aromatic jus. And here is my second break. Whilst my fiancé enjoyed a fantastic and unexpected cheese course. And nope, it was not the classic cheese tray but a mini Andereer “rustico” with rhubarb and amazake caramel. It was really tasty and so kawaii (cute). Ah, I wish I would have took the nine course at this exact moment. Followed another “surprise” a alp chocolate heart wrapped by a red root beet coulis (?) covered by a cloud of merengue. Me I’m still on hold by the way. But I could try both of them ☺️ And finally the dessert for both of us. A red apple sorbet, intense flavor topped by green apple grenadine (oh childhood is calling) and a flavored oak and camelina roll with slices of pickled apple (not sure to be fair). It was an amazing dessert, perhaps the less surprising course. To close the dinner, we were served a biberli (classic Appenzell cookies) filled with cassis. My fiancé also enjoyed a “digestiv”, a 12yo Yamasaki bottled back in 1984 which was an unconventional choice but nevertheless he truly liked it. Mention to an exceptional team, from the sommelier to the waiters to the cuisine crew; highest competence with the right amount of warmth, humor and passion for their metier. They all contributed to a spotless evening. Sven Wassmer was waiting for us at the restaurant exit, in a joyful mood and wished us a happy Easter. Like only few restaurants, Memories truly deserve its name: you create some whilst you are there, you reminisce some as well. Time melts in the timeless elegant frame of the Bad Ragaz Grand Resort.

Es gibt sie also doch noch, die kulinarisch perfekten Abende in tollem Ambiente! Sven Wassmer ist mit dem Memories in Bad Ragaz meine derzeitige Nr. 1 was Fine-Dining auf Sterneniveau in der Schweiz betrifft.Wir haben uns für die 'goldene Mitte', dem 9-Gänger inkl. Weinbegleitung entschieden. Was Sven und seine Küchencrew auf den Teller bringen ist schlichtweg sensationell - sowohl von den Zutaten her wie auch von der Zubereitung und der Präsentation. Sehr schön präsentiert, aber nicht so unnötig verspielt wie in so manchem 2- oder 3-Sterne Michelin. Die Portionengrösse ist perfekt und das Wintermenu 2021 sehr abwechslungsreich.Zur gewählten Weinbegleitung gibt es nur ein Wort zu sagen: SENSATIONELL! Wir sind Wein-affin und haben schon so manche Weinbegleitung gebucht. Was hier aber das Sommelier-Team zu den jeweiligen Gängen als Begleitung serviert ist abwechslungsreich, spannend und enorm passend. Wahsinn was hier für passende Perlen gefunden wurden - wir sind überwältigt! Gang für Gang mit einer Offenbarung im Glas. Ich empfehle zum Menu unbedingt die Weinbegleitung! Es wäre schade wenn man sich nicht in dieses kleine Abenteuer stürzen würde. Ausserdem sei hier darauf verwiesen, dass die Weinbegleitung zu einem äusserst fairen Preis angeboten wird - TOPAm Schluss bleibt mir noch das ganze Team in höchstem Masse zu loben. Ihr seid spitze - wir haben uns sehr wohl gefühlt und kommen schon sehr bald wieder. Danke auch an Sven für das Menu und für die tolle Zeit!Wenn ich könnte, würde ich 6 Sterne vergeben!

We were lucky to dine at ‘Memories’ restaurant. At the moment only hotel guests can book with the restaurant and the public outside cannot due to COVID. So it was easier to book but still we had to wait for a few days. We didn’t know what to expect but had heard so many positive reviews. We were not disappointed. It was amazing. The food was so flavourful and Chef Sven Wassmer allows the ingredients to shine. Who knew the plain potato could taste so good. We also chose to do the wine pairings and the wine chosen complimented each dish and added an extra complexity to the dishes. The sauces which included ingredients like pine oil tasted and smelt amazing and I made sure I scraped the dishes clean, not to leave any sauce behind. The staff are so knowledgeable and friendly and surprised us with a little cake as we were celebrating my husband’s birthday. I wholeheartedly recommend this restaurant and would suggest that you allow yourself to be open to go on this food/wine journey. The menu journey through ‘winter in the alps’ was brilliant. I look forward to sampling the other seasonal menu journeys in the future. My husband and I want to be back in September to try their new menu and also to enjoy the outdoors of the Grand Resort Hotel. A pleasure from A to Z. It is a real experience to be able to eat with Sven Wassmer and his top team. The atmosphere with all the wood, the surprise menus, the wonderful service. Everything at the highest level and with great attention to every flavor and every detail. Be it a snack of a 1 year pickled Brussels sprout which, as small as it is, pampers the taste buds. Or the potatoes from the Albula Valley with an incomparable (protein-deprived?) raclette cheese and truffles that I finally liked (sorry, truffles aren't normally my thing, but here it was awesome). The salsify marinated with crumble that I will never forget, a simple crust in 3 different ways, e.g. as a jus or as chips. A cauliflower heart nutty and awesome. The sourdough bread, which is fluffier than any yeast dough bread, is also a real treat. I almost couldn't stop eating, there were so many things to try. I'll come back a second time, even if the price is high, it's worth every franc. It's great how the cooking here is of the highest standard and we felt incredibly comfortable, like we were at home visiting good friends. Somehow normal and yet very unique.

We finally decided to try memories restaurant at bad ragaz resort. It’s easy to get a reservation and that is a sign already. During the holiday season the restaurant not fully booked. For me it just is not cutting it. The service is mediocre, staff is lovely, but very amateurish. Each time you need to ask for a refill of the drinks. Not clearing the table from the hot towels. These stayed on our table until the 3rd course. Staff is dressed sloppy. Suit of one of the guys was way too tight and looks very sloppy. The food for a 2 star Michelin is nog giving the wow factor. Compared to Igniv and Ecco in Ascona, Sven W is not in the same league. The good pairing is questionable and in combination with the ‘factory’ style service and preparation, we were not impressed. Sorry Sven ...,Bring it up a notch.

Le restaurant se situe directement dans l'hôtel Grand Resort, pratique donc pour les résidents que nous étions. Le concept est très original, puisqu'il se décline en plusieurs entrées, plusieurs plats et plusieurs desserts, tous les plats étant à partager entre les convives. Les plats sont originaux, très bien dressés et tout était parfaitement délicieux. A la sortie, il y a encore un chariot à bonbons où chaque client repart avec une petite boîte remplie de sucreries.

Das bot uns die Gelegenheit, das leidenschaftliche, grossartige Zubereiten der Speisen aus nächster Nähe mitzuverfolgen.Jeder Gang, es waren deren 12, wurden am Tisch liebevoll zelebriert, und mit der zur dargereichten Speise passenden Herkunftsgeschichte perfektioniert.Zu jedem Gang, gab es den passenden Wein. Viele Weine, die wir nicht kannten. Aber das Vertrauen in die Sommeliere hat sich gelohnt. Begrüsst wurden wir mit den Amuse Bouche von Sven Wassmer persönlich. Der Blick in die Küche zeigte die Professionalität aller Mitwirkenden. Ein harmonisches Gewusel hat man das Gefühl. Der Kohlrabi-Gang hat uns beeindruckt. Ein kluges Gericht ohne Fleisch. Auch das Brezeli mit Käse war ein Highlight und in das Kirschdessert wollten wir uns reinlegen.

Der gutaussehende und sehr sympathische Sven Wassmer pflegt einen kollegial-freundlichen Kontakt zu seinen Gästen. Aber viel ist Schein und Glanz und seine Crew scheint er nicht im Griff zu haben - offenbar auch seine Köche nicht. Seine Angestellten in bieder-grauen Anzügen zeigen am Tisch wenig Empathie und das fast schleimig-routiniert anmutende Verhalten stösst auf. Viele Gänge sind o.k. und bestenfalls gut gemeint aber das Ganze bewegt sich nie auf zwei Sternen. Die völlig verbratene Felche und die zu einem so genial feinen Fisch echt unpassende und üppige 'grüne Paste' lassen am Chef schon Zweifel aufkommen. Ein paar Gänge später dann etwas ganz Inadäquates, ein riesiges Bretzeli-Käse-Sandwich, zwar köstlich aber nach all den Gängen ein üppiger Töter. Die Balance und die Finesse stimmen hier nicht, ein echter Connaisseur geht hier niemsls essen, leider sind auch wir in die Falle all dieser Bewertungen geraten.

Es war ein Erlebnis. Das 12 Gängemenü mit alkoholischer Begleitung ist einfach nur ausgezeichnet. Der Service, wie auch die Küche, haben die hohen Erwartungen eindeutig übertroffen. Eine eindeutige Empfehlung, wen man einen ganz besonderen Abend mit herausragenden Essen und beispielhafte Gastfreundschaft haben möchte. Meiner Meinung nach sollte man hier eigentlich mehr als 5 Sterne vergeben.

Memories are made at Sven Wassmer's Memories in Bad Ragaz. Given the quality of food and service at this restaurant, I'm very surprised by the lack of reviews. The service at Memories is exceptional and the team went far and beyond my expectations. They managed to accommodate me when I arrived and discovered that the hotel had cancelled my reservation. (A story which is too long to be elaborated here.) Sven's philosophy of working closely with the producers, farmers and local artisans in the region and Switzerland is clearly demonstrated by the freshness and flavours of the ingredients in his dishes. Vegetables and herbs taste as fresh as if they had been just picked. Fish from various Swiss lakes is tasty and perfectly cooked. Meat (pork and beef) are so tasty that they far outshine the accompaniment and sauces. The restaurant offers a unique and extremely tasty non-alcoholic pairing which is definitely worth trying. In terms of an overall experience, Memories is operating at the level of 3 Michelin-starred restaurant. Definitely worth a visit for a special and memorable experience.

Wir durften gestern Abend ein fantastisches Essen im Memories geniessen. Essen, Service, Restaurant - alles hat einfach gepasst. Wir haben uns sehr wohlgefühlt. Das Konzept der offenen Küche ist wirklich sehr gut umgesetzt. Wir hatten auch einen absoluten "Logenplatz", direkt vor der Küche. Wir hatten zu unserem 12 - gängigen Menü 2 x die Weinempfehlung und einmal die alkoholfreie Getränkeempfehlung. Es hat beides sehr gut zum Menü gepasst. Die 2 Sterne hat sich Sven Wassmer mit seinem Team absolut verdient.

Für das kulinarische Erlebnis fehlen mir schlicht die Worte. Das Degustationsmenu mit 12 Gängen von Sven Wassmer war 12x ein Traum von einem Gedeck. Das im vergangenen Jahr eröffnete Restaurant in einem der schönsten Resorts der Schweiz ist eine tolle Ergänzung in der Region, wenn man mal gerne das moderne Fine Dining erleben möchte. The best meal of my life. I went for the 12 course meal with wine pairing and didn't regret it. The staff were all so passionate about their jobs and had a story for each course. Every bite was well thought out and lovingly made. From clover, to fir, cheese water (cheese with no protein but all of the taste), char, venison, pulled pork and so much more. Sourced from almost exclusively local producers, this meal satisfied and surprised me. The bread was so lovely, with a crunchy exterior and perfectly soft inside. I could see the baker had carefully prepared his starter and experimented with various flours until he found the perfectly milled version. I had to hold myself back from eating it all for fear of filling myself too much to be able to finish the meal.Taking my tastebuds on a tour of the local farms with all of their innovative ideas and respect for traditional methods, I made my way through dish after dish. Each as spectacular as the last. In between dishes I could smell the smells of various things being prepared and it got me excited for what was coming next. The wine pairings complemented the food so well and were a show of their own. Finally the decor was lovely, providing warmth, class and privacy as I enjoyed my meal. Even the logo with its Swiss mountain M and moon O were cleverly incorporated. I will definitely be back!! Thank you to everyone on the team for sharing their amazing talents! Netter Empfang und Begleitung zum reservierten Tisch, unmittelbar vor der offenen Küche. Rassig wurden Speise- und Weinkarte gebracht und nach dem Apero-Wunsch gefragt. Wir haben uns für den Neun-Gänger entschieden. Als Wein Pinot Noir aus der Herrschaft.Gestartet wurde das Essen mit einem Feuerwerk von verschiedenen Snacks. Am Tisch erklärte und präsentierte uns ein Koch das selbstgebackene Sauerteigbrot. Es wurde dann aufgeschnitten mit einem Riesenmocken Anke serviert.Es folgten verschiedene Vorspeisen wieZwiebelbrotsuppe, Saibling aus dem Val Lumnezia, Zander aus dem Lago Maggiore, Sven‘s Raclette.Hauptgang Königstaube aus der Bresse.Dann Anderrer Säumer Chäs von Floh.Die Desserts - Rohe Pastinake, Geröstetes Reiseis aus Tessiner Korn, Domleschger Melone. Zum Käfeli servierte man leckere Petit Four.Fazit: Ein Dinner der Extraklasse in einem wunderschönen Ambiente - mit sehr freundlichen, dienstfreudigem Personal.PS. Sven Wassmer knüpft nicht einfach nahtlos an seine grossartige Kochkunst, welche ich bereits in Vals geniessen durfte an, nein er hat diese zwischenzeitlich weiterentwickelt, konzentriert und sie den neuen Gegebenheiten in Bad Ragaz angepasst. So darf nun auch mal ein Heilbutt im Menü auftauchen - allerdings nicht ohne dass er sich zuvor an Ort und Stelle über die Nachhaltigkeit des Fischfangs informiert hätte. Klassiker, oder hier eben Memories, wie der immer köstliche Val Lumnezia Saibling an der himmlischen Tannennadelsauce, oder eine neue Variante vom Schweineschwanz bleiben uns Glücklichen erhalten. Das Gemüse ist weiterhin erstklassig und schmackhaft wie selten woanders. Die Milchprodukte, sowie der Käse werden weiterhin aus Andeer bezogen und sind somit weltmeisterlich gut. Herr Stichter hat zu jedem Gang einen bestens passenden Wein, oder auf Wunsch gar eine finessenreiche alkoholfreie Gertänkebegleitung parat. Wunderschön und praktisch auch seine Weinkartenbox, die in sechs handlichen Büchlein die bereits sehr reichhaltige Champagner-, Wein- und Tee-Auswahl präsentiert. Der Service ist jugendlich frisch und unkompliziert und modisch in Grautönen gekleidet, der Gastraum und die voll einsehbare Küche sind top funktional modern, aber doch sehr nobel gehalten. Das war schon alles so perfekt, dass es mich zuweilen fast dünkte bereits den Boden unter den Füssen verloren zu haben und mich auf einer Genussreise durch neue Spähren zu befinden, wo immer noch mehr und noch vollkommenere Speisen auf mich warteten ...Nochmals an alle sichtbaren und unsichtbaren Helfer dieses herrlichen Abends meinen allerherzlichsten Dank.
