Also excellent under new management, I would even say a little better than before. Although not quite comparable in terms of food. Service was always top, food was an experience and simply heavenly, great selection of sake. The chefs also took the time to serve and explain certain courses themselves. And also took time to answer questions. Price is rather high, but you should treat yourself occasionally.

Exceptional experience. The twins gave us a magnificent taste experience. Get advice and have a sake to accompany your dishes.

Last night my wife and I had the tasting menu at The Japanese restaurant, it was a truly wonderful experience. The food was creative, lovingly prepared, and delicious. I particularly want to say how amazing the staff were, friendly attentive, really enthusiastic about the food, the wine choices and the whole experience they create. Thank you for making our evening so special.

A culinary highlight. The combinations of the dishes were a dream, it was a culinary journey, from the amuse bouche to the dessert. The wine pairing was also perfect and unique. The flavors were perfectly balanced and filled all the senses, the play with acid, salt or umami was perfect. The twins and their team gave us a wonderful evening and we recommend it to anyone who has the time to travel to Andermatt.

Absolutely overwhelmed by the fine way in which sea food is celebrated. Really best of the best and I've really experienced a lot.... very differentiated in taste and incredibly creative with spices/herbs. The bite is varied and prepared with great attention to detail. The hefty price is justified for this revelation.

Food was fine. Service from the restaurant was way below a 2 michellin star. Very disappointing the stars should be taken away.

A good omokase (tasting menu), though fairly steeply priced, right up there with Midtown Manhattan rates. I didn’t feel the scallop course and the Kagoshima beef course did justice to the premier ingredients. The other courses were enjoyable. The wine pairing was intelligent and apparently slightly flexible depending on how the sommeliere sizes you up. A la carte sushi and seaweed rolls are available, along with a very extensive wine list. They should offer more higher-end wines by the glass.

If you like to eat and enjoy an extraordinary experience, you should definitely visit this restaurant. An evening with Fabio Toffolon and Dominik Sato and their kitchen team is a simply sensational experience. The two brothers' tasting menu strings together one taste explosion after another. The Japanese influences run through the entire menu and always produce surprising flavors for the European palate. The fish is perfectly cooked, the meat is buttery tender. The desserts and friandise are also a very special highlight. The wine pairing during our visit was also very exciting and successful. With the new restaurant manager, the service has also improved again. I'm definitely looking forward to next time. The second Michelin star is definitely well deserved.

05.11.23 Swiss couple We booked at THE JAPANESE restaurant. We took the 5-6 course menu. The restaurant is very classy and beautiful. Everything was perfect. What I really appreciated were the different people who came to present the dishes to us and at the end the two chefs congratulated them :) very pleasant. All the dishes were very delicious with lots of flavor. We started at 8:30 p.m. Unfortunately I asked a little late to taste the sushi but the kitchen was already closed. What would have been nice is to warn so that I could order again. the waitress was very friendly and brought us desserts that were not ordered. We really enjoyed the food and it was of high quality. the chefs, waitresses, everyone who works in this restaurant does a superb job. Well done again and see you soon. Mr Da Costa

Wonderful 6 course tasting menu! Thank you very much for the lovely evening.

Having lived in Asia for several years, and having eaten at The Chedi Restaurant the night before, I went in with pretty high expectations. Regrettably, these expectations were not met. We did not stay the entire dinner and walked out an hour and a half into the service after we still had not received even a single dish of the main course and only a few very small appetizers, some of which amounted to little more than a shot of broth. My companion, who had several serious food allergies, did not feel welcomed by the staff and did not feel his concerns were adequately met or addressed. While the staff were very professional by any standard, they were not personable and hardly approachable. The atmosphere was well enough, but felt very constrained. Neither my companion, who cannot drink, or I, who can but rarely chooses to, had any alcohol for this meal, but I strongly suspect pacing was too heavily reliant on this being chosen for those who selected the 5 or 6 course set menu. Overall, the evening was very disappointing and I admit I was a bit disgusted by the staff as we were preparing to walk out, as their only defense was, "we are a Michelin Star restaurant!" I am sorry to inform you, that is meaningless when it comes to customer satisfaction.

We enjoy a lot Japanese kitchen and it was a pleasure to have a dinner at this restaurant with our two kids. In fact, the food is really excellent. But, we were there the wrong day ! We arrived at 7:30PM for the Omekase menu (6 courses)…The first dish has been served at 9:00PM ! And our kids were waiting like us to eat something. The reason ? A group was present in the restaurant and was treated in priority… @M. Blatt : It’s a pity that The Chedi is not able to organize the restaurant and kitchen in consequence to avoid this situation. Really disappointed by this experience.

I can't fault the quality of the dishes during my last visit, but the service was more than disappointing for a Michelin-starred restaurant!!! Not receiving the right dish, leaving the refreshing napkins at the start of the meal lying around throughout the meal, poorly served, a lot of waiting, etc... It's a real shame because it ruins all the work in the kitchen!

This is a review for the Japanese by the Chedi up in the slopes (could not find it on google to review). Absolutely amazing atmosphere and fantastic to dine 1-star Michelin in the slopes 🚠 Service is absolutely amazing and food is very good! Special thanks to Giuseppe 🙏🏼 we will be back!

Very charming restaurant in a japanese style. The food was very delicious and the wine also. You have to try the kobe beef and black cod. I liked it very much. To top the great food, the personnel was very friendly and very attentive. The chef de service and his team did a great job yesterday.

Amazing sushi on the slopes. Fantastic views and delicious food. Unfortunate to see blue-fin tuna on the menu though!

Great service in an intimate setting. The Japanese offers 22 different options to build your own Kaiseki experience. There is a mix of traditional and modern interpretations, along with some more Swiss inspired courses. I really enjoyed the sashimi and sushi in the cold starters and the duck for main. The pineapple dessert was worth adding and exceeded its description. I also appreciated the extensive tea selection. I had four different Japanese teas that matched to the courses. Not an official pairing, but ask and they can recommend some delicious tea. A great experience if you’re already at the Chedi.

How does this have 1 Star??? NOT true japanese its Swiss fusion BS! Wagu with mash potato is WRONG, fresh oysters on celeriac mash is WRONG. The sushi/sashimi chef had PREcut all the fish and just assembled, this is not how to prepare! I've lived in Japan and this place is so wrong. SERVICE We arrived 4min early and was told to go away until exactly 8:30pm. What the? We were later sat at the end of the sushi counter, no other guests... 30min later the counter area was full and they were enjoying drinks and starters BUT we were still hadn't even got the wine list. A word to the manager whom agreed we had been forgotten but was surprisingly unapologetic. So disappointed.

This is really great, we didn't really know what to choose, so we let the chef make his own decision. He made different dishes for the four of us.

A pity! Unfortunately, the price-performance ratio is in no way right here. The food is of high quality, but the rest is disappointing. We only decided on a 4-course menu with sake and were shown the door shortly after 8 p.m. At a price of just under CHF 690, I want to be able to enjoy my meal in peace and maybe order dessert. Unfortunately not possible here. A unique experience! Addendum to the answer: Unfortunately, this is information that was not communicated to us. Unfortunately, we were only presented with the menu card and so there was only the option to choose between 4 to 6 courses. So you would have to please explain to me how you can manage a 6-course menu in a timely manner. You would do well to present both cards to the customer so that you can save time with fewer dishes. Another note: The service staff was very courteous and praise for that!

Stunning cuisine and excellent presentation. My recent visit at The Chedi Andermatt was pure joy with a dinner at The Japanese as my highlight. I love the Modern Kaiseki-Kappo Menu concept. You can customize the menu to your needs and your taste. The staff is "extremely" polite, but just the right amount of kindness. Everyone is very competent and knows what he/she is doing. There was a bit of confusion about what we have ordered but they have immediately recognized it. It is great that everyone knew what to do when there were mistakes that I have noticed as well (e.g. you do not start cleaning the show kitchen when guests can see it). Thumbs up!!! I do understand people who got upset because they got kicked out after the time run out. But that's how it works when the restaurant has two service times. I was lucky being able to stay in the restaurant after the official opening times to really enjoy everything. Overall it was an amazing experience and I am looking forward to visiting The Chedi Andermatt again!!!

we were very much looking forward to this restaurant due to its accolades and reviews. we arrived at the restaurant on time while they were preparing for welcoming the guests. although the hotel was full of guests, the restaurant remaind empty. as we visited with our two girls we went for the menu and the kids for something simple (they offer a nice sounding kids menu in 5 courses for a price of chf 45). our menu offered some nice ideas with a fusion of different asian cuisines. unfortunately some ingredients did not taste fresh or of a quality one expects in a place like this. some dishes as the miso soup (instant?) and the rice (overcooked and dried out on top) were poor. the design of the restaurant is very nice and the atmosphere could be really nice with more guests. as we were the only table for most of the evening (one couple arrived around 8 p.m.) the staff was constantly standing and chatting hearable what did not help to improve the situation.one of our girls decided to eat just plain udon noodles with clear miso soup. after she finished her (small) portion we asked for a supplement as the waitress recommended already at the time she delivered the noodles. they factured chf 68!!! for these two small portions... the restaurant manager wanted to talk about this with the chef and let us know. no answer. on check out we confronted the lady at the reception and she wanted to report it to the management. no answer. luckily enough chedi has a nice main restaurant.

It's the best restaurant you've ever been, promise! I don't even know what to add, except of that every dish is made with love and nothing is there by accident. I know it may seem expensive but they only use the best ingredients - so accept the pain in form of money and treat yourself with the best food in the world! And the service-people... exceptional good! They can read your wishes out of your eyes. :) !

Ein unvergesslicher Abend im The Japanese: schon der Empfang war sehr herzlich und wir als Laien der japanischen Küche wurden von Charlotte und Jason sehr professionell durch den Abend begleitet. Fantastischer Service; sehr kompetent und freundlich haben die beiden uns bedient. Ein grosses Merci!Die Auswahl und Präsentation der Speisen war top. Geschmacklich super fein. Auch das Angebot an Sake ist riesig. Die Preise sind sicher im hohen Niveau aber jeder Franken lohnt sich.Wir haben den Abend sehr genossen und können einen Besuch nur empfehlen.

Vous voulez payer plus de CHF 500.- pour être mis dehors car vous ne mangez pas assez vite? Ce lieu est fait pour vous!Sinon, évitez ce restaurant - dommage, car les plats sont très bons - mais vous y serez traités de manière inacceptable.

Great food, but you can’t handle your guests this way! The Japanese Restaurant serves excellent food - that’s a fact. Service is good... if you don’t outstay the Chedi’s (so-called) hospitality. Spending over 500 CHF on a dinner to be almost kicked out of the restaurant at 8 PM is absolutely outrageous. Especially when (probably) VIP guests are getting seated after 7 PM ( regular guests can arrive at either 6 PM OR 8:15 PM). Sad... for the waiters and for the chefs who are making a fantastic job. But management is truly awful!

Wir waren am Abend in diesem schönen Restaurant. Klar wussten wir vorher schon das das Restaurant teuer ist. Nur haben wir mit etwas kreativerem auf dem Teller gerechnet, wenn man 40 Franken pro Teller aufruft. Wenn ich in ein Sternerestaurant gehe und 160 franken für 4 Gänge ausgebe (kein Problem damit) möchte ich aber nicht schon nach einer Stunde fertig sein. Da gehört für mich einfach mehr dazu als nur 4 Gänge servieren und Tschüss. (Ja ein Gruss aus der Küche war auch dabei) Wie gesagt das Essen war super, aber für mich auch nicht mehr.

Ah non! Vous êtes juste à Andermatt! Magique!Un seul GROS bémol: j’aime bien laisser au service le choix du vin. En verre d’apéritif, il a choisi le vin le plus cher! INSUPPORTABLE! Pas pour le prix mais le principe, c’est tellement nul! D’où mon 4 sur 5!

Quizá nuestra velada no haya tenido el mejor comienzo. . el menú a la carta solo se nos mostró a pedido, una copa de vino rosado no estaba disponible ("la botella no se había abierto") y el gin-tonic "tendría que ser recogido para mí en el bar exterior". Los alimentos . . pedimos el menú de 4 platos. . . estaba muy sabroso (excelente rollo de dragón), sin embargo, no fue del todo "el evento" que esperábamos y nos cuesta diferenciarlo de otros buenos restaurantes japoneses que hemos visitado en el pasado. Personalmente, la próxima vez nos quedaremos con The Restaurant y las otras delicias locales en Andermatt, pero muy recomendable si te mueres por la comida japonesa.

Excellent restaurant japonais, une cuisine splendide faite de produits d'exceptions des saveurs incroyables et de fraicheur intense. Bref c'est tout simplement magnifique en terme gastronomique.Tout comme pour l'hôtel ce restaurant manque d'âme et trop sombre le personnel n'est pas très chaleureux mais fait très bien son travail, il manque un directeur de salle qui mène le bal. ,les tables et chaises sont peut confortable.

zeker een aanrader ,we bestelden een menu en kregen alle 4 andere gerechten zeer lekker wel aan de dure kant 300 euro per persoon.

Helaas vonden we dit echt een tegenvaller. Het restaurant was om te beginnen erg stil, geen muziekje o.i.d. en over het algemeen niet gezellig. Mijn partner koos voor een mix van sushi en ik diverse gerechtjes van de kaart. Tja, sommige gerechtjes waren wel apart, maar om nou te zeggen, goh, wat een bijzondere smaak (of wat dan ook) nee.... Hetzelfde gold voor de sushi. Jammer, vooral als je daarna nog een forse rekening krijgt van +/- 500 euro.

Top!Wir liessen uns von den motzenden Gästen am Nachbartisch nicht beirren und genossen einen wunderbaren Abend bei leckerer Weinauswahl (und -Empfehlung) und harmonischen Gerichten. Une expérience unique, une explosion de saveurs, une variété incroyable de mets caractérisent cet établissement (on est loin du "sushi seulement qui caractérise tant de restaurants de la même origine). On y rajoute un choix de sake qui permet de découvrir (ou de re-découvrir) que cette boisson n'a rien à envier à des vins de grand cru pour accompagner ce repas exceptionnel. Et pour accroître encore la qualité de l'ensemble un service irréprochable dont notamment la compétence du sommelier pour conseiller le sake adapté à chaque plat. En résumé, un repas unique et inoubliable.

Dieses japanische Restaurant im Chedi Hotel bietet erstklassige Gerichte, die wunderschön präsentiert werden. Das Servicepersonal ist hervorragend und sehr freundlich. Es war eine großartige Erfahrung, in diesem Restaurant zu speisen, ein Ort, an den man auf jeden Fall zurückkehren kann.

Fans de gastronomie, nous avons souhaité tester ce japonais étoilé. L'accueil et le service ont été de très bonne qualité, mention particulière à la sommelière qui a parfaitement conseillé le choix des sakés, avec un engouement et une jovialité fort appréciables.Nous avons pris le menu végétarien et notre fille a choisi divers mets sur l'autre menu.Tout était très bon, et assez copieux. Inutile de prendre les desserts cela n'apporte rien.Nous restons toutefois persuadés qu'en Suisse les testeurs du guide Michelin ont tendance à surévaluer les restaurants et que ce macaron est surfait. Comme soulevé dans d'autres commentaires, le niveau de luminosité est très bas et nous trouvons cela dérangeant surtout quand il s'agit de profiter de plats délicats. Cela n'enlève en rien le très bon moment passé dans cet endroit.

Nachdem uns die Speisekarte sehr gut erklärt wurde, haben wir uns für ein 4 Gang menu entschieden. 4 Menu von der Vegikarte 4 von der normalem. Es war schwierig da es so viele feine Auswahl gab. Inzwischen wurde und Edamame serviert (mariniert mit Trüffel) HAMMER. Alle Speisen waren sehr unterschiedlicher Geschmäcker und der Wahnsinn. Das Essen hat seinen Preis(160.- p. P) ,es war jedoch jeden Franken wert. Grosses Lob.

Ein wunderschöner Abend mit vielen kulinarischen Höhepunkten, das Kaiseki Menü muss man probiert haben, Qualität sensationell, geschmacklich sensationell, Service sensationell, die Sake Reise zu den verschiedenen Gängen ein absoluter Traum, nochmal vielen Dank an den äußerst kompetenten Sommelier.Bleibt in Erinnerung......

Ce restaurant est une formidable opportunité de déguster le meilleur de la cuisine du pays du Soleil Levant sans passer par la case aéroport. Tous les plats proposés étaient parfaits, et servis par un personnel très compétent et à l'écoute. A refaire !

Wer ausgefallene Speisen liebt ist hier richtig aufgehoben. Die einzelnen Gerichte sind äußerst kreativ zubereitet. Interessant ist die riesige Auswahl an Sake.

Keine Widerrede, die Qualität, Präsentation und Geschmack ist hervorragend, der Preis am oberen Limit. Vom Service waren nicht überzeugt, da könnte man schon noch zulegen. Zuerst wurden wir barsch beim Eintreten ins Hotel gefragt, was wir wollen und das Restaurant sei da hinten links. Okay, suchen wir selber. Dann am Tisch mussten wir selber nachfragen ob wir einen Apéro bestellen können. Die Wartezeit zwischen den Gängen ist zu lange, viel Wartezeit. Dann als einige Gäste weg waren, gab es fast kein Personal mehr und daher auch keine Aufmerksamkeit. Schade, gibt einen fahlen Nachgeschmack.

The restaurant has perfected the Japanese food for European taste. Fine dining indeed. Great service and Margot is a great server.

One would not expect such quality, freshness and tastiness of Japanese food in the middle of the Alps.The food is just amazing and worth going and the price is reasonable for this kind of restaurants. I definitely understand why they got a Michelin star. The Keiseki menu is very good, the most memorable dishes we got were scallop carpaccio with beurre blanc and caviar, the signature black cod with shiitake, the marniated toro.It is a must go place if you stay in the Chedi Andermatt.

Apart from excellent service and beautiful surroundings, the whole meal was a treat. I ordered a 4 course meal, with wine pairing from the Kaiseki menu. Both the Sashimi and Tuna belly were excellent and also picturesque with the added theatre of smoke, but the Black Cod was my favourite. Never have I tasted such succulent tasty fish! The Wagyu Beef was perfect as expected. The wine selection was on point and from around the globe. Even though the portions were generous, I was tempted by the dessert menu and opted for the Black Sesame Icecream, which was in one word: devine!Not the cheapest place to eat, but considering the remote location and small town I thought it was fairly priced. Would love to visit again, if my budget would allow me in future!

Essen ohne Zweifel ausgezeichnet, Preis-Leistung allerdings am Limit. Design hat mit Japan wenig Affinitaet. Unsere Buchung - vor mehreren Tagen - wurde ohne unser Wissen veraendert und niemand kam auf die Idee, bei uns nachzufragen. Trotzdem mehrer Mitarbeiter aus dem Restaurant an uns vorbeigegangen sind hat uns - wartend vor dem Restaurant - niemand angesprochen. Kundenorientierung? Aufmerksamkeit??

We had a set course meal paired with sake and everything was amazing. We could hardly finish all courses. The sake sommelier was also extremely knowledgeable.

I walked in to book a table....the man on reception showed me plenty of availability for Saturday night (2 days away). 'Your room number sir' he says....I am not a guest at the hotel I replied. 'We are not allowed to take bookings from people who are not guests of the hotel'...his exact words.....no reply from me...I was speechless.....I have stayed in Chedi hotels before but have never come across such an attitude!....Chedi is now consigned to history in my eyes..I will never darken their doors again...on the bright side I probably saved myself a fortune.

In my over 200 reviews never meet anyone like Eugene. He was very helpful and attentive. Chef kaizen made us veg sushi mainly maki and avocado. Superb. Chef is from Osaka and worth going to this Resturant.

C'était notre 5ème séjour dans ce magnifique hôtel de montagne. Et une première pour ce restaurant japonais, un peu caché dans une annexe de l'hôtel. Nous n'avons pas apprécié le cadre, mur de briques, décoration extrêmement épurée et fade, l'impression d'être dans un bunker. Heureusement, le service est d'un professionnalisme et d'une gentillesse inégalés. Avons pris le menu à 4 plats. L'esthétique des plats est juste incroyable, de vrais tableaux vous sont servis. Par contre, nous mettons un bémol concernant la saveur des plats, que nous avons trouvée très fade pour certains. Et que dire des quantités servies, qui nous laissent sur notre faim. Pour un menu à 140.--, nous ne pouvons en être satisfaits. Les quenelles de glace en dessert nous a agréablement surprises, mais nous avons du mal à comprendre les fraises et framboises en décoration, totalement insipides et sans aucun intérêt, servies à fin novembre et qui viennent certainement de l'autre bout du monde… Last but not least, comme déjà mentionné précédemment et également par d'autres internautes, le prix des vins est excessif, malgré le fait que les autres palaces de montagne appliquent les mêmes. Ce n'est pas le prix en soit qui est un problème, mais le coefficient appliqué sur certaines bouteilles, coefficient qui ne dupe pas la plupart des clients qui se rabattent simplement sur un seul verre de vin ou une bière pour accompagner leur repas. Cette politique tarifaire devrait vraiment être revue, le standing ne peut tout justifier.

Per la quinta o sesta volta ci siamo recati in questo ristorante. La qualità del cibo è sempre stata ottima ma da un punto di vista organizzativo abbiamo in passato sempre constatato alcune lacune. Als ich für 4 Personen telefonisch reservierte, fragte man mich, ob es einen speziellen Anlass, wie z.B. einen Geburtstag gäbe. Ja, tatsächlich, antwortete ich, wir feiern einen Geburtstag. Als wir dann ankamen, wurden wir gefragt, wer denn das Geburtstagskind sei. Da dachten wir, unausgesprochen, wohl alle, cool, gibt sicher noch eine kleine Überraschung. Allerdings war das Geburtstagsthema bei den Restaurantangestellten mit dieser letzten Frage beendet. Wir assen dann für etwas mehr als 900 Franken. Am Schluss fragten wir, ob das Geburtstagskind, ein Mädchen, welchem die Ess-Stäbchen gefielen, diese als Erinnerung mitnehmen dürfe. Nein, das gehe leider nicht, die würden sie lediglich verkaufen und 20 Fr. kosten.Das Essen war vorzüglich. Der Sake war von höchster Qualität. Die Bedienung war ansonsten auch freundlich. Etwas komisch fanden wir noch, dass beim „sharing“-Menü so Fondue-mässig geshart werden muss, also alle mit dem gleichen, ihrem Besteck in die Speisen, die für alle sind. Im Grunde funktioniert dieses sharing-Konzept nur bei Sushi, da diese separat, ohne dass die Stäbchen in Berührung mit den allgemeinen Speisen kommen, aufgenommen werden können. Ganz zu Schluss kam die Angestellte mit einer Art Humidor, jedenfalls einer edlen Holzschatulle an den Tisch, die hohe Erwartungen weckte. Die Enttäuschung war gross, als wir dann lediglich ganz normale Pralinen (Läderach), jeder eines, zum Abschluss serviert bekamen, und eine zweite Praline als fast schon grosse Geste verkauft wurde. (Über die Qualität von Läderach-Pralinen möchte ich nicht viel sagen, einfach nur, dass eine internationale Clientele sich besseres, z.B. von nicht industriell gefertigten Gianduja-Pralinen aus Italien und ähnlichem, gewohnt ist, überdies gibt es doch auch hervorragende süsse Abschlüsse aus Japan.)

Wir hatten ein À-la-carte-Abendessen aus Sushi und Sashimi, wir hatten die Ente Gyoza als Vorspeise, sie waren sehr lecker (das Beste, was ich je hatte) als eine Auswahl an Sushi und Sashimi.Wirklich guter Service, aber ich muss sagen, dass wir zu meinem Freund Geburtstag waren, also buchten wir um 20 Uhr 30, um einen langen Abend zu genießen, aber um 22 Uhr waren wir schon fertig.Warum den Dienst eilen?Ansonsten herzlichen Glückwunsch an die Köche und Kellner für dieses wunderbare Abendessen.

Dies war unser zweiter Besuch im Chedi Andermatt. Das Hotel selbst ist eine Reise wert, nur um dort zu bleiben - exzellenter Service, riesige Zimmer, gut präsentiert. . . Aber ich schweife ab. Wir hatten im The Japanese einen Tisch für vier Personen gebucht und hatten einen perfekten Abend.Drei von ihnen hatten das Omakase-Menü im familiären Stil (zum Teilen) und eines mit à la carte. Während das a la carte gut war, war das Teilen von Omakase hervorragend! Super großzügige Portionen, perfekt zubereitet. Wir haben alle japanisches Essen auf der ganzen Welt gegessen, und das im Vergleich zu den Besten. Fein, gut vorbereitet und schön präsentiert.Wir begleiteten das Essen mit einem passenden Sake-Flug. Der Kellermeister, der den Sake servierte, war äußerst sachkundig. Jedes Glas war völlig anders und passte perfekt zum EssenDer Service ist freundlich und höflich. Kombinieren Sie dies mit einem schönen Ambiente, ausgezeichnetem Essen und gut gewähltem Sake, und Sie sind im Himmel

Unser letzter Besuch im The Japanese Restaurant ist immer noch in bester Erinnerung. Ein zwischenzeitliches Juni-Abendessen im The Restaurant war zwar ebenfalls sehr gut und bestens bedient. Trotzdem freuen wir uns bereits auf unseren kommenden Novemberbesuch, um erneut ein Kaiseki-Menü geniessen zu dürfen. Danke für eure top Qualität.

Incontestablement le meilleur hôtel où j'ai eu la chance de séjourner. Nous y sommes allés avec mon épouse pour notre anniversaire de mariage. J'avais pris l'offre sur qoqa.ch en suite Deluxe. Nous avons été agréablement reçu par le personnel de l'hôtel. Ils sont au petit soin. Le cadre est juste splendide, rien à redire sur la propreté des lieux, tout est à sa place et aucun détail n'est oublié. A mon sens c'est du luxe dans le domaine du luxe. A la fois cosy et classe on s'y sens comme à la maison. SPA, piscine rien à redire. La suite Deluxe de 110m2 superbe, tout est domotisé, lumière, rideaux, tv, musique et même la cheminée. Le tout est géré avec un iPad.Nous sommes allés manger au japonais et avons eu la chance de déguster des mets de qualité mais surtout d'apprendre à apprécier le Saké. Si vous avez l'opportunité d'aller dans ce restaurant, il faut impérativement déguster leurs différents saké.Nous sommes littéralement devenu fan de ce vin de riz.D'ailleurs il me semble que c'est l'un des rares endroits en Suisse où l'on peut trouver des fins connaisseurs de saké.Dès que l'occasion se présentera nous y retourneront en famille.Un grand merci à toute l'équipe du Chedi Andermatt pour ce week-end magique que nous avons passé.

Similar to the Restaurant (not very creative witz their restaurant names....) at the Chedi, the Japanese restaurant is offering excellent food, faultless service and a wide choice in menu and wine. Not to be missed if you spend a night at the Chedi.

We really enjoyed our evening at the Japanese Restaurant, the staff is incredibly friendly and professional: thanks to the team!My rating is not a top rating, because even though the food is of far better than average quality, for us it was not when it is comes to comparison to other Michelin star restaurants or restaurants that expensive.

Cadre magnifique ! Service irréprochable, qualité des mets exceptionnelle, carte des vins sublime....Un must !!

C’est presque incroyable de trouver un restaurant japonais de cette qualité sublime dans un village dans les montagnes suisses. L’un des meilleurs que j’ai connus au cours de nombreux voyages au Japon. Une cuisine inventive et moderne, un mélange de flaveurs très réussi, présentation artistique. Ne manquez pas cette expérience hors normes.

Sagte meine Frau zur Kellnerin bei der Bestellung: „Bitte lachen Sie jetzt nicht: ich esse keinen rohen Fisch und auch keine Meeresfrüchte.“ Kein Problem für die Küche, wir haben nichtsdestotrotz fantastisch gegessen! Die gemischte Sushi-Platte wird frisch und vor unseren Augen zubereitet, für meine Frau einfach mit Gemüse statt mit Fisch. Der Black Cod in Miso ist eine Offenbarung! Und schliesslich das Wagyu Entrecote: perfekt medium-rare gebraten, eingebettet in delikates Gemüse, ein Hochgenuss! Dieses Restaurant (wie auch das Hotel) lohnt einen Abstecher nach Andermatt!

Wir durften ein tolles Menu geniessen und liessen uns von Gang zu Gang überraschen. Jede Speise war vorzüglich und sorgfältig zubereitet und auch schmackhaft. Da japanisch natürlich eher Meerestierlastig aber das kann ich bei dieser Qualität verschmerzen. Hat wahnsinnig gut geschmeckt und erinnere mich gerne an den tollen Abend.

Loved the food. Took 4 courses from the menu and was not disappointed. Enjoyed the scallops above all. Although the food is fantastic, the room is small and not welcoming.The sommelier and the choice of sake are impressive.

We've had a 4 courses Menu with a sake-flight. Inspiring, gorgeous and extremely tasty. Try the sashimi and the black cod! You will love it!

Wir hatten uns für den letzten Abend unseres Aufenthaltes einen Besuch im The Japanese aufgehoben.Man kann aus verschiedenen Menues wählen. Wir ließen uns vom Omakase Menü überzeugen. 3 Gänge mit verschiedenen Speisen. Wir haben eine spezielle Zutaten ausgeschlossen, aber beim Rest der Küche freie Hand gelassen.Die Speisen waren alle gut. Der Service war sehr aufmerksam und freundlich. Wir wühlten uns sehr gut behandelt.Wir hatten aufgrund des 1 Michelin Stern Ratings einen Aufpreis eingerechnet. Leider muss ich sagen, dass der sehr hohe Preis die Qualität der Speisen nicht rechtfertigt. Wir können es mit gleich-gewerteten Restaurants vergleichen, und hier kommt das Japanese nicht heran. Solide gute japanische Küche, ohne Aha-Effekt. Man zahlt vermutlich einen Teil Hotel-Ambiente im Preis mit. Punktabzug deshalb für Preis und fehlendes erwartetes Exzellenz-Erlebnis.

Wir haben das 6 Gang Menu gewählt, ausgezeichnete Küche, alles auf höchstem Niveau - ein MUST - wenn man im Chedi logiert. Wir mussten an der Theke essen, war bedingt gut, aber das Essen hat alles wieder ins Gleichgewicht gebracht.

Era descritto sul sito dell’hotel come raffinatissimo japan restaurant ma ci siamo ricreduti appena arrivati perché, via mail ci avevano fatto difficoltà sulla disponibilità dei posti dicendo che gli unici disponibili erano uno di fianco all’altro di fronte al bancone dello chef che avrebbe cucinato davanti a noi e noi abbiamo accettato, mentre una volta arrivati c’erano molti posti disponibili e ci siamo accomodati in un tavolo normale e comunque lo chef al bancone non ha fatto granché a parte togliere pellicole dal pesce crudo. Il cameriere é stato troppo presente e fastidioso tutta la cena proponendoci un aperitivo che sembrava fanta (saké frizzante) e dandoci consigli su come mangiare gunkan uovo di quaglia. Qualitativamente il pesce é molto fresco ma la proporzione col riso in nighiri gunkan e uramaki é esagerata e soprattutto il riso non è raffinato con piccoli chicchi e dolce. Tempura insipida e un po’ pesante. Il servizio è stato troppo veloce e alla fine eravamo da soli alle 22,30. Triste e troppo caro 264€ in due bevendo saké. A Milano ci sono decine di ristoranti jappo migliori a prezzi inferiori.

Das Omakasa-Menue hat uns voll begeistert. Jedes einzelne Gericht war eine Geschmacksexplosion, perfekt inszeniert und serviert. Ein Genuss von A-Z und absolut zu empfehlen! Wir kommen gerne wieder.

Wie bereits im Vorjahr gönnten wir uns auch im April 2017 einen Abend bei André Jaeger. Der Freitagabend war sehr gut besucht, die Kulisse und der betriebsame Service somit weniger entspannt als an vorangegangenen Besuchen im THE JAPANESE RESTAURANT. Nichtsdestotrotz genossen wir eine ausserordentliche Komposition der Meister ihres Faches. Danke für dieses tolle Restaurant.

För att ha en stjärn i guide Michelin var det en klar besvikelsen. Den sämsta en stjärniga restaurangen vi besökt. En amuse i början men ingen mer inte ens en liten sötsak som avslutning eller någon mellanrätt. Sushin som flera pratat om en riktig besvikelse - väldigt snygg men mycket ris och stack inte alls ut smakmässigt. Däremot fick vi en langustine på spett samt en black cod som var riktigt goda.

One star Michelin? Why??? The quality of the food is excellent and the staff ist extremely polite and attentive. But the first course was served more than one hour after we ordered. The second and third course were served together. Moreover we ordered the second bottle of wine and we were told that the same wine was finished. We decided for another kind of wine, we drunk one bottle and we were charged for two. The overall organization was poor and not acceptable for such kind of hotel and price.

Joli cadre , tables pas trop serrées , personnel très gentil et accueillant. Mon mari qui n’est pas un fan de cuisine japonaise a été conquis , merci !!

We went with my family for diner on the 21st of December for a nice evening diner as we are staying at the Chedi and were so very disappointed by the whole experience. Actually mainly te goofs was terrible, some how because as a group of 7 we were offered a menu in advance which was really interesting. We took a mix of rolls and some of us are big fans of Japanese cuisine these were really bad quality ( a roll with chicken?) a basic California not even good and a spicy tuna really not good too. The truffle edamame don’t taste like really truffle. The tempura is really not good and mains we had a sea urchin which didn’t even taste like sea urchin ( I am a fan normally) but it had no taste. Overall if you want good Japanese food don’t bother going to this place.

We were staying at the Chedi for a pre Christmas family break and booked at the Japanese restaurant. Our two teenage children love Japanese food and this was meant to be the highlight of our holiday... sadly it was very disappointing. The food was a let down and expensive. We were seated in corner facing a wall and my son was so crammed in a corner he could barely get in his seat! The staff were all very nice but the service was slow. We arrived at 7.30 but it was 8.30 before we received our sushi and our children were hungry! The main courses were tiny and not worth the wait. Sorry to be so negative but our usual holiday treat is Nobu (Dubai) and this just didn’t compare.

Nous avons découvert le restaurant lors de notre séjour au chedi. Nous avons pris un menu pour découvrir des plats que nous n'avions jamais eu l'occasion de goûter. Tout était parfait et nous avons apprécié que notre serveur puisse nous aider quant au choix du saké en fonction de nos goûts. A essayer si vous êtes dans le coin.

Schon der Eingang zum Restaurant ist super schön gestaltet. Das Interieur ist schlicht. Die Küche ist hervorragend und der Service äusserst aufmerksam und kompetent!! Für mich beste japanische Küche in der Schweiz.

Spitzengastronomie in Andermatt. Wir haben uns das Kaseki Menu gegönnt und würden jederzeit wieder in dieses Restaurant kommen. Es gibt hier gar nichts zu bemängeln, einfach nur Lecker. Top Lokation im Chedi Andermatt!

Nach Oman, Bali und nun in der Schweiz waren wir begeistert von diesem kleinen, gemütlichen Restaurant. Für uns klar das Nummer 1 Restaurant in den 3 The Chedi.Speisen top zubereitet, mit tollem Appetizer und zum Schluss den japanischen Picknickkorb mit Süssigkeiten. Sehr aufmerksamer und freundlicher Service, tolle Weinauswahl. Kleiner Tipp an den Sommelier, der Sassicaia ist, wie von mir gesagt, der DOC nicht der Ornellaia, welchen wir getrunken haben....

Anlässlich unseres Aufenthaltes im Chedi haben wir im "The Japanese Restaurant" gegessen. Und wir wurden nicht enttäuscht. Wir lieben asiatische und speziell japanische Küche. Und hier hat alles perfekt gepasst. Sehr empfehlenswert.

This was my second time at this restaurant.The first time was really disappointing.This time it was great.Food was really good and very creative.Service was perfect, atmosphere was very good.The main difference is the quality of food!Almost everything was really tasty.Try the sharing menu!
