the best pure spelled bread in the city of Solothurn

On Saturday I bought plain spelled white bread from the day before (i.e. Friday) at Mezzogiorno in the old town and cut it on Sunday. What can I say - one of the best white breads I've ever eaten! Rarely have I had such a compact but at the same time fluffy white bread that could retain moisture so well. Only the breads from the Eigenbrötler from Lucerne are of similar quality and he supplies star restaurants with his small works of art. Unfortunately, I missed asking how the bread is made exactly and I couldn't find much about it on the website. Feel free to add that :) We are definitely looking forward to our next visit to Solothurn & to the next bread from you!
