Balthazar Downtown St. Moritz by Paco Morales in St. Moritz

Unexpected but amazing! Beware, their website (still) states that they serve sushi and Japanese fusion. We arrived with this expectation, and we were surprised to find that they had totally changed their concept in December 2022, and instead of sushi, we were offeres a choice between 3 menus with strong influences from the namesake chef Paco Morales, combined with some local ingredients. Although this was not at all what we expected, we let them take us on an adventure and it was totally worth it. At times, the atmosphere seemed a bit cold and tense, but the food and service were outstanding! A bit pricy at 600 CHF for 3 people, but worth it.

Fabulous experience Paco Morales, he has excellent and light cuisine, well deserved the two stars, we took the Engiadina menu, a succession of exquisite dishes. The two guys in the dining room are excellent and very professional, as are all the young staff in the kitchen, they all deserve a round of applause 👏 . Absolutely worth trying

Breathtaking view and excellent tasting

Overall good atmosphere and decent food, but some dishes were just mediocre. Not great value for money. Decor and ambience is top, but the place felt somewhat lifeless as there were many empty tables. The sushi we had was nice and so was our other starter (Croquettes). Perhaps if we had stuck with sushi, the place could have gotten 3 stars. The purple gnocchi with octopus was disappointing. Flavor was bland and uninspired. The octopus was chewy and didn’t taste of much. The mains were good, but too simplistic. While the fish itself was fine (although some pieces were slightly overcooked), the presentation was mediocre as both dishes just came with a few slices of grilled vegetables. Also, the amount of fish on each plate was very different. The orange teriyaki salmon was a much smaller portion than the mixed grilled fish plate, despite having the same cost.

The VIP welcome from the 2 owners made us dream of the Italian sea. The Japanese and Italian marriage was perfect. Only fresh products and tastes at tpmbet. The place is idyllically located with a wonderful view of Lake St. Moritz. Do not miss

Lovely restaurant and breathtaking view, excellent Italian/Japanese cuisine, we ate both Italian and Japanese, everything was excellent, compliments to the impeccable chefs including the staff, highly recommended to try thanks again to the chefs and all the staff

Excellent food & good service. The ambiance is very cold and therefore a minus. But if you just go for asian food, it is really worth it! :-)
