Hot runny cheese Mmmmm. Dish: Tartare Le 2015 and L’argentin. Well seasoned, lots of very very good taste, accompanied by cooked potatoes and homemade foamed butter with SUPERB toast, just talking about it makes me hungry :). These are the best tartars in the entire region for us. If you are a fan, go there with your eyes closed. We also had a wine from the region “Larmes de Cabernet Jura” Domaine Angelrath Le Landeron. Le restaurant a donc gagné un client supplémentaire et j'ai décidé d'explorer la carte plus en profondeur.J'ai peu de temps après ma première expérience, tenté le tartare "L'indien" avec du curry maison, des noix de cajou torréfiées et du tamarin. Ce fut une très belle surprise avec du curry maison très subtil mais goûtu et un très bon équilibre entre les différents ingrédients. Un vrai régal ! Merci !J'enchainai avec "L'argentin". Première déception. Un tartare riche en ingrédients et pourtant bien plat... fade. Des champignons, des piments et du chimichurri que j'ai cherché bien désespérément dans ma préparation. J'en ai finalement trouvé quelques bribes qui, ajoutées de manière un plus généreuse aurait sans doute donné un résultat exquis. Pas grave, ça arrive.Je me rabats donc sur un "provençal", avec une moutarde à l'ancienne, du miel et de l'estragon. Bien que les grains de moutarde soit bien visibles, je n'ai rien senti d'autres que le miel qui surplombaient tous les autres ingrédients.Et ainsi de suite : tartare de daurade. Le goût puissant de cette famille de poisson étant abattu par une quantité un peu trop élevée de mangue et de pomme etc etc etc.Je me trouvai un peu frustré moi qui avait bien apprécié le tarte traditionnel puis l'indien.Attaquons les accompagnements à présent. Les tartares (du moins en livraisons) sont accompagnés de pain frais et non de toasts. Cela ne me pose personnellement aucun problème étant donné la fraicheur inégalée et inégalable du pain.
