Magnificent, impeccable service, I recommend the Gamaret red wine from the Changin school. New weighing on March 12, 2024. Pan-fried foie gras starter with spinach and coconut sauce. Pollack fillets could have been a bit hotter. Great choice of cheeses, the St Gallen blue is exceptional. To finish, I recommend a chocolate soufflé with pistachio ice cream. Enjoy your food

Excellent meal, unfortunately tarnished by two aspects. - extremely expensive. - service. Even if we are aware that it is students in training who carry it out. However, this does not justify that the second bottle was directly served without having been tasted beforehand, and poured directly into half-full glasses. To top it off, it was partly spilled in my handbag and on the tablecloth. Tablecloth that we kept dirty throughout the meal, all this without apology from the room managers, no bottle replaced… and not even a free coffee! Let's say that this experience will not be followed up, and that it will have cost the meal, plus cleaning the bag... Conclusion: extreme disappointment knowing all the same that this restaurant prides itself on having a Michelin star A little wink, all the same, noting the extremely kindness and competence of this cheese manager, despite being barely 18 years old! What a pleasure to discover someone passionate about it.

Not even possible to order half bottle (3.5dl). Not mentioning the welcome drink white wine (Riesling) at chf20 for 1dl. A pure joke or scam… this spoiled our lunch and we won’t come back because of this! Just not acceptable…

Much as I like to encourage education, after last night's dinner at Le Berceau des Sens, I would only recommend it if your child was a student there. First, once we got to the EHL building, there was very little signage for the restaurant was very difficult to find until someone took pity on us and guided us there. (Hint: it's on the 3rd floor, good luck finding the right elevator.) Once there, it was hugely disappointing, especially given the Michelin and Gault Millau accolades. Nice and eager to do the correct thing as the students were, the service was just terrible, and the apprentice staff were clearly very poorly managed. Once seated, it took at least 20 minutes to get a menu; the sommelière-in-training kept forgetting which wine we ordered. Our entrees arrived nearly an hour after we sat down. On finding that a server had given us the wrong tableware for the dishes, they whisked it away and we could see several conferring for 10 minutes to figure out which we were to have. After the entree, the main dishes took another 45 minutes, despite our asking several students and finally the man who seemed to be the manager what the problem was. No one spontaneously checked in with us about the long delays. There was a constant crowd of servers walking to and fro, but with little productivity to show for it. The food, once it came, was visually appealing, but the flavor mediocre. (I've never seen dry foie gras before, I don't even know how that's possible.) It really seemed as though no one had bothered with practice sessions for these young people before throwing them into the dining room. It looked as though they were learning on the spot. Not only did we end up feeling we were the lab rats, but had to pay a lot for the experience. I'm really sorry to dump in the students, I think the blame goes to the teachers/managers. It was quite a waste of time and money.

We had a lunch on Monday which is the first day for most students working in the restaurant. It was a great pleasure to watch stressed students making mistakes. I believe it is a part of the experience. The food is expected for a Michelin 1 start restaurant. I highly recommend Voile d'encornet. Actually I don‘t remember many details after 4 glasses of wind. The wind selection was so good.

The whole experience was superb! However, I allow myself to nitpick and point out a few drawbacks, which mean that I only give 4 stars out of 5. Indeed, the 16/20 and the Michelin star were not found on each plate. The service: Taking into consideration that it is a training place, I found that the service was very successful and the various students did their best to give a good impression. Negative point, I find that there was a lack of flexibility towards customers who do not eat fish or who wish to have 4 or 5 courses at the same table. Indeed, we had what we wanted but the service, both professional and informative, was not too open to too many differences at the same table. I think it was to avoid overly complex situations in the context of learning, but it seems important to me to challenge them with what could await them later. Wine: Everything was excellent. The prices seemed a little high to me. The food: Everything was excellent except: - Soft lobster and caramelized lamb sweetbreads. I love cooking when food is processed but I am a little disappointed that a food as noble as lobster is processed so much. As a result, we could have compared its taste to crab and we lose added value. On the other hand, the sea side took over the lamb which we didn't smell enough. The texture play could also have been more advanced. - Oberland veal crusted with truffle. This dish was a big downer for me. The veal was poorly cut with too much fat in relation to the meat. Bitterness was taking over too much. The nose was not spicy enough at all. It lacked more crunchy textures. Thank you, however, for highlighting forgotten vegetables such as crosne even if it is misspelled on the menu. I am very surprised that there are no vegetarian options in the main dishes. Once again, overall, we had a superb evening and thank the whole team for their work.

Nous avons passé un bon moment et avons trouvé que c'était une belle expérience que de venir souper dans ce restaurant gastronomique de l'école hôtelière de Lausanne :- l’accueil est très bien organisé et permet de traverser les couloirs de l’école hôtelière qui sont sans cesse animés- l’espace bar est petit et relativement bruyant dû au fait que des étudiants prennent également un verre au bar du restaurant ; le service était un peu long pour la préparation de nos deux cocktails- les plats sont bien présentés et la nourriture est goûteuse. Les apprentis sont polis et essaient de faire de leur mieux pour satisfaire le client- le cadre est épuré et l’ambiance est relativement détendue- le rapport qualité-prix est correct- le parking (gratuit) est facile d’accès et appréciable. En discutant avec les responsables, nous avons pu en apprendre davantage sur le cursus des élèves, leur niveau et les débouchés proposés suite à cette formation à l’EHL. Nous repartons satisfaits de cette nouvelle expérience et recommanderons ce restaurant.

En entrée, nous avions choisis la tomate cœur de bœuf: très frais, simple mais délicieux.En plat, pissaladière et agneau. La cuisson de la viande était parfaitement maîtrisée, rosée juste ce qu’il fallait, tendre comme du beurre. Quant à la pissaladière, petit bémol sur l’assaisonnement (pas de sel) et la cuisson des légumes à peine croquants. Le « shot » de tomates du jardin cependant était très bon et bien épicé.Pour finir les desserts, abricots du Valais, cacahuètes et gingembre et soufflé amandes et griottes tout simplement exceptionnels, plein de saveurs !Au niveau du service, on ressent évidemment qu’il s’agit d’étudiants « tous frais », les erreurs sont fréquentes et l’approche parfois timide et maladroite (par exemple, me proposer du vin 2 fois de suite alors que je suis visiblement enceinte de 8 mois :-) ) mais le tout est rapidement corrigé par les formateurs.Certains étudiants, notamment Ambre et Yuhin nous ont bluffé par leur aisance et leur professionnalisme après seulement 1 semaine de formation.Globalement nous avons beaucoup apprécié notre repas et l’ambiance de ce restaurant et nous nous réjouissons de revenir !
