Divine cuisine. Beautifully presented dishes, exquisite tastes and flavors. It is a restaurant located in the 3rd oldest palace in Switzerland, Hôtel des Trois Couronnes, which has had the privilege of welcoming great composers such as Tchaikovsky and Saint-Saens. It's a shame that the music offered in the restaurant is more "boom-boom" than anything else.

My experience at Maribu Restaurant in Vevey, was nothing short of fantastic. I was really taken aback by the exquisite balance between tradition and innovation, showcased in their omakase and kaiseki offerings. From the moment I stepped into Maribu, the ambiance whispered of an elegant Japanese aesthetic, blending simplicity with sophistication. The chef’s selection showcased a sublime array of seasonal ingredients, each presented with utmost respect for its inherent beauty and taste. Delicate sashimi, precisely cut and arranged, celebrated the seafood's freshness and quality. The progression of dishes from light to rich, cool to warm, created a harmonious rhythm that danced across the palate. But it wasn’t merely about the food. The curated beverage pairings were thoughtful and inspired, weaving seamlessly through the meal's fabric, highlighting, and complementing the dishes with grace and precision. Whether it was a sip of crisp sake, a fragrant wine, or a non-alcoholic concoction bursting with layered flavours, each beverage was a perfect consort to its partnered dish. In the heart of Vevey’s old town, Maribu Restaurant offers a unique experience for those seeking an authentic and imaginative Japanese dining experience.

Great restaurant. Toilets with an incredible candlelight ambiance. A delicious playlist that takes you back in time. A yes and I probably forgot the best sushi I have ever eaten.

A backyard in Vevey next to the photography museum. A metal staircase... we wonder if we are really arriving in a restaurant. We pass through the door and find ourselves in a magnificent lounge area. Welcomed by Alastair, a Scotsman who has mastered the Japanese art of preparing fish, sushi, sashimi and other specialties, adding all his creativity. When you leave, you feel like you've spent the evening at a friend's house while having enjoyed multiple bites, each one more tasty and surprising than the last. I recommend without any reservation what is not a restaurant but a concept in which the chef has put all his beautiful personality.

Magnificent evening at Manabu on a Thursday evening. We were lucky enough to have Alastair who cooked just for the 2 of us and it was fantastic. High quality products, precision in the preparation of dishes and above all the unique experience of having a private chef with whom you chat throughout the meal. What an experience!! We had an AMAZING evening at Manabu. Alister accompanied by Jackson pampered us, delighted us, surprised us. Refinement without fuss, warm welcome, discovery of flavors and sake, unrivaled quality of fish, surprising and perfect seasonings right up to dessert. The icing on the cake: the privilege of having had the place just for us. We felt at home for a very special evening. Thank you for this moment suspended in time.

I visited this sushi restaurant last week and was blown away by the quality of the food. The sushi was incredibly fresh and flavorful, and the presentation was beautiful. The restaurant had a relaxed atmosphere, and the staff were very friendly and attentive. I especially loved the o toro maki and nigiri.The prices were very good for the quality of the food, and I will definitely be returning soon. Highly recommend for real sushi lovers!

One of the most fantastic dining experiences we have ever had. I have so much to say about how amazing this was, I need to go point by point: - the location, decor and lighting of the restaurant were stunning. An amazing setting which really elevated Manabu from a meal to an experience. We were given a tour by Alastair and Jackson, and we could tell how much heart and soul the put into it, from decor collected through their lives, to the rotating art collection they keep. - We were upgraded to sit at the sushi bar, indeed they organised the evening so that myself and my girlfriend were the only guests. We developed a fantastic relationship with the chefs, and learned so much about sushi, fish, and their lives along the way. - The food was sublime. Uncomplicated but almost ornamental. Simple but intense flavours. Their philosophy is somehow a contradiction. The most stunning flavours without the pretension. What they serve is real food, and we will struggle to look at sushi and this type of cuisine in the same way ever again. - Value-wise, despite the higher price point, we had a 3 hour dining experience with 15 courses, and private bespoke customer experience. I know many restaurants in Geneva where you would pay the same for three mediocre courses and impersonal service. - But above-all, the best part of the experience was seeing the joy and love that the chefs put into their food. Their passions and dreams are made flesh in Manabu, and we got the opportunity to share in that. This is a once-in-a-lifetime finding experience, and if you are reading this review, don’t hesitate any further - just go.

This restaurant is exceptional, the chef is there just for you, friendly, attentive, precise, and above all passionate. I am very demanding and the quality of the meal is at a level that I have never tasted. More than a dinner, it is a real experience to be enjoyed at least once, in a relaxed and warm atmosphere. Unique experience and very good food

I have been to the Manabu restaurant twice. Every time I received an incredible experience. It was the first time I ate sushi of such high quality. And it's not just sushi, this experience is more about the feelings. Professional team, wonderful atmosphere, wonderful people, incredibly high-quality and fresh products. From an individual who was a Maki Roll man Manabu was able to convert me too liking and thoroughly enjoying Sushi and Sashimi. The flavor profiles and freshness was truly outstanding.

Our experience at Manabu was incredible. Every course was delicious but the experience was punctuated by a few strokes of culinary genius: like the brûlée scallops and the pig’s foot smoked in the fire by the cook himself. It was like going to a dinner party with a private chef.

Excellent rooftop bar in the center of Vevey. My boyfriend and I were very impressed by the quality of the wines served. Loved the sparkling wine so much, I took care to write down the name. The staff was very friendly and gave us some great suggestions. Moreover we got some lovely snacks on the house offered. I loved the laid back atmosphere and summery vibe. This place is ideal to have a little aperitif (or two) before going to dinner.
