Technical knowledge and understanding of flavours on show. Some of the best fish and seafood dishes I have eaten. Sea urchin outstanding and sole was inspired. The main course lacked cohesion and cooking of the lamb missed the mark for me. Service was formal, and attentive. Some low level music would help to break down the stuffy and stiff atmosphere.

2nd experience at the Cheval Blanc restaurant at the Hôtel des 3 Rois yesterday in Basel. And once again an exceptional experience of flavors, a true culinary journey with great discoveries. The Breton lobster in particular is fantastic, and with each dish, an emulsion enhances everything. It's a real feast on every plate, and for that, congratulations to Chef Peter Knogl and his team. The room service is also very pleasant with a caring team.

The restaurant has only 10 tables making for a very special dining experience. A reservation should be made well in advance, especially if you’re aiming for a Friday or weekend. Service was just phenomenal, with everyone being super attentive and very cordial. The tasting menu was an exceptional showcase of French haute cuisine, with just enough surprises to make it feel playful without being overdone. It’s genuinely worth a visit.

Excellent on all levels. The service was A1, attentive and professional. We felt completely comfortable and the atmosphere was very relaxing. The hall was royally furnished according to the hotel with a few tables that were spaced at a comfortable distance and thus allowed privacy. The food was simply to die for. The subtle and perfectly balanced acidity, which accompanied all courses like a common thread, was simply incredibly fun. We were always looking forward to the next course without having that feeling of heaviness that is often the case with French cuisine. Every course surprised us and topped the previous one. This increasing performance is extremely important to us at Menus and is very rarely achieved at this level. The wine: The sommelier was extremely personable, extremely competent, tailored to individual needs and took our experience to the next level. Thank you.

In the past 13 months we have been guests in 250 star-rated restaurants (76***, 83**, 91*). We celebrated this anniversary with an excellent dinner again at the excellent Cheval Blanc***. A beautifully sumptuous restaurant, with an outstanding chef and his excellent team. It was an outstanding culinary performance from start to finish. Brilliantly crafted, the highest quality products have been masterfully combined to create an excellent taste experience in a class of its own. Even short-term special requests were responded to immediately and an elaborate special menu was immediately put together for us. Simply sensational! The whole menu was great, very diverse in terms of smell and perfect in terms of taste. It was a magnificent and unforgettable culinary performance by an outstanding chef de cuisine and his first-class kitchen brigade. Mr. Knogl is a true master of his craft and his Cheval Blanc is an absolute MUST for anyone who loves and appreciates the fine art of cuisine! Likewise the fantastic sommelier Mr. Kokemoor, who stands out not only for his impressive specialist knowledge, but above all for his infectious passion for wine. The wines he recommended were all excellent and perfectly matched to the food and our taste. Simply fantastic! The captivating maître Mr. Giliberti ensured the enjoyable combination of food and wine. With his very friendly, polite and courteous manner, he always made us feel very welcome and made the evening a special pleasure for us. From the first to the last minute we were treated incredibly politely, warmly, kindly, courteously, very generously and respectfully by the excellent maître and his fantastic team. We felt very comfortable and well looked after. We had a wonderful and, above all, unforgettable evening in the fabulous Cheval Blanc. Thank you very much for that!

It was a wonderful experience to be able to eat at Cheval Blanc. The outstanding creations from the kitchen are a culinary feast for the palate. When visiting, be sure to allow enough time to really enjoy the many courses. Minimum 3 hours including aperitif. The service staff was extremely friendly and attentive, every wish was fulfilled. We'd love to come back.

The reservation process was tedious, not because they're slumped with customers but because they don't have anyone else to replace when the reservationist is on holiday. Other than that, a 3-Michelin star restaurant exceeds novice assumptions of a 3-Michelin star restaurant. Service is superb. Timing is impeccable. Every movement is a synchronised performance, serving and opening the dishes altogether. The harmonised flavours of each course are evocative. The restaurant's ambience was breath-taking. I wish it could run for even more than 4 hours. I suggest you arrive early and sample their signature and award-winning cocktails at the hotel's bar. Chef Peter Knogl finished his performance by speaking to all the diners one table after the other. Cheval Blanc is an experience you need ticking off your bucketlist ASAP! P.S. The most stunning thing I have noticed is the switching of languages in just a snap from one table to the other by the staff; English, German, French then back to English for my table. I'm not sure if I heard Italian but most definitely the three aforementioned languages. Totally mind-blowing!

Simply great, friendly reception, well looked after by the very attentive staff throughout the evening and all in a relaxed, cozy atmosphere. The different courses, visually and culinary sensational. The sommelier's wine recommendations were an excellent match. I still have to get rid of one small but. The dress code was pointed out on the homepage and again explicitly when making the reservation. We stuck to it exactly, which unfortunately wasn't the case for a number of other guests, sweaters with a shirt over the pants, sneakers with the famous three stripes, etc. Of course, in the end the cash has to be right, a little more consistency is difficult. Nevertheless, thank you for the lovely evening.

The Cheval Blanc in Basel leaves nothing to be desired. No! Rated with 3 Michelin stars, it has everything to offer that makes a gourmand's heart beat faster. The in-house gourmet restaurant Cheval Blanc fits seamlessly into the luxurious ambience of the Grand Hotel Les Trois Rois, located in the center of Basel directly on the Rhine. A house with reputation and class. Everything is very elegant here, great furnishings, you can perceive the history of the house with all your senses. An aperitif in the hotel bar? Well! Then into Cheval Blanc. Table culture at its finest. The service is simply perfect, although a bit stiff with a slightly artificial casualness but with insults. The sommelier understands his craft and recommends well. He has plenty to offer and the wine list is remarkable. Chef Peter Knogl ensures a truly great cinema. He and his team ensure – as I have heard consistently for years – a top-class culinary experience. The preparation of the food, product quality and dramaturgy of the menu are exceptional. We had the big fall menu. Particularly noteworthy were the amuse bouches, including probably the most delicious mussel ("Moule bouchot, citron vert") that I have ever eaten. The dish with sea bass, chorizo ​​and cucumber is bombastic. The incredibly tender saddle of venison from Styria is also still on the tip of my tongue. It was an all-round successful evening that we will remember for a long time. All around 5 stars+. As soon as I can afford it again, I'll come back.

It was my cousins 75th birthday and we decided to visit 5 countries for a celebration of fine dining and superb museums. Our first meal was here- the grand dame on the Rhine with a beautiful view in a regal setting. The head of dining was courtly but friendly. He ensured that our 3 hours of dining was top drawer in every way. This is classic white glove service. But, of course what pushed this experience over the top was the culinary treasures created in the kitchen by this 3 star winning chef who also took the time to greet his guests. There was no pretense here, it was simply a class act that was executed with precision. Since we traveled a lot in our jobs, we have a wide base for comparisons and this truly was one of our top ten places to eat. Viking is based here. I would suggest they need to study Le Cheval Blanc to see what service could be like on a RIVER. AGAIN, THANKS!

The cuisine deserves its 3 stars, dishes of great finesse and complexity in the design for flavors that combine wonderfully. On the other hand, the service is definitely not up to par (1 hour wait before the first course, then it continues at a rapid pace until the plate is taken away even though it is not finished....) and this despite numerous servers (no shortage of staff on duty that evening). One of them (and I point out it was the only one) acted in a discriminatory manner with his own foreign colleagues. A shame on his part, when he had already demonstrated the sufficiency to describe to us or not what he served us before his actions. The whole thing leaves a very mixed experience between the excellence of the cuisine, the uncoordinated service and this particular waiter who has no place in any restaurant. We were unable to share our experience with the chef Mr Knogl who unfortunately did not appear in the room.

Cheval Blanc is the ultimate classic French fine dining experience in Switzerland. We came here to celebrate my birthday while in Switzerland looking for a 3 Michelin stars experience. Located in the historical Grand Hotel Les Trois Rios. The riverside setting is charming and romantic. You start by a welcome drink at the terrace looking at the Rhine greeted by suited , polite and professional staff. The head chef Peter Knogl came to say hi before we moved to the main dining room and service started. The decor and interior is classy retro French with high ceilings, arches, classic chandeliers, large windows and round tables with candles. Ambience is warm and intimate. Service was top notch and impeccable. Staff were all knowledgeable with refreshing attention to details. Cuisine was modern french with Mediterranean influences, flavors were complex and dynamic. Ingredients were chosen carefully and courses were presented beautifully. I liked all of my courses, highlights of the menu were the Sardine Macaron, Langoustine curry, Red Mullet filet and the French saddle of lamb with mediterranean flavors. Wine pairing was excellent and enhanced every course taste and flavor. Sommelier was very professional and knowledgeable yet intimidating a bit. The French Cheese selections from Maître Antony in Ferrette was aromatic, rich and satisfying, Maître Antony is one of the best in the world that many Michelin starred Chefs get their fine cheeses selection from. The night ended well with a couple of delightful desserts courses, few delectable bites and some velvety chocolate. Overall, we had an elevated fine dining experience that will bring me back if in Basel again.

Tldr: Excellent three Michelin star restaurant in a beautiful setting. Come hungry if you're having the prix fixe menu. Came for dinner. Ordered the six course prix fixe menu. Got 14 courses. Not disappointed. The service is excellent, the setting is beautiful, and the food is always high quality. I wasn't blown away by any single dish, like I often am when dining at a place of this caliber, but everything was very good, and there was a lot of variety. It's an excellent experience, but be prepared to linger over dinner. We arrived at 7:15 and left at 11pm.

Fantastic experience at Cheval Blanc. I’ve been to a few Michelin’s in the past and this has taken the top spot. Staff were very friendly and accommodating. We had a voucher given to us by our children, which the waiter did not look at. The meal was very good, and the staff friendly, except the sommelier who did not stop at our table throughout the meal, instead a young girl who did not offer us anything and who forgot to serve us, (an excuse oops sorry I forgot you) we had nothing in our glasses neither water nor wine between the cheese and the dessert that we waited for..... and very friendly waiters. A bottle of water that ended up on the next table? At the end of the meal the waiter gave us back our voucher with a credit of CHF 123.- As he had not taken the trouble to look at it, we had not consumed everything. In addition we know exactly the price of our gifts, very elegant on their part. We will definitely never come back, so lost money and bitter taste. Too bad, but it ruins everything.

My Second time here after 4 years and still the best dining experience and favorite restaurant in the world! I can easily write a paragraph about each dish I had but I don't want to spoil the fun adventure for you. What I can tell you though, is that every bite you take from a single sophisticated dish gives you a different experience over time. The service was impeccable with about 7 staff serving only 10 tables the whole night. Will definitely visit again next time in Switzerland. I suggest to book at least a month early for an early dinner. Get there at least half an hour earlier to enjoy the view of the Rhine River with some wine on the terrace. Simply go with their full tasting menu and enjoy 3hrs of amazing food. Then afterwards you can return to the terrace to enjoy some coffee.

Unforgetable experience. It is difficult to explain in words what we felt throughout the tasting so I am attaching photos of the edible works of art that we had the pleasure of enjoying. The appearance was spectacular but the flavors were from another planet, all recognizable and without great inventions but perfectly balanced (the most absolute perfection is expected from the cooking point of the products, which they certainly achieved in each dish) The treatment is worthy of mention since it is not only good but it is close and pleasant without being annoying at any time, you can tell that they are great professionals and above all that they enjoy what they do. I am not a person who can afford to go to these types of restaurants regularly (unfortunately) only on special occasions and therefore I am quite demanding and I can say that every euro was worth it.

The finest dinner experience money can buy. Everything from A to Z was perfect. The best food without any disappointments. The chef cane to ask everyone how do they like the food. The waiters and waitresses were very polite, attentive, and talkative. I have written a long review for this almost 5 hour journey in a 3 Michelin starred restaurant, but I'll just let you enjoy the pictures of it all :) (It also has 19 points from Gault Millau and is #4 in La Liste)

The "classic French" in philosophy is almost a bit intimidating, but what is delivered is absolute world class, top craftsmanship, top compositions, and obviously geared towards current events, not a theoretical concept. Particularly noteworthy: Despite the number of courses, the perfect total amount of food is something that most top restaurants fail at (and serve far too much overall). There is also a top crew at work here, especially the sommelier. Recommended!

Third time in ten years that we have come to this restaurant. A disappointment this time. Not very generous cuisine, served – a la carte – in homeopathic portions. The venison and pigeon are well cooked (obviously slow cooked sous vide), but the garnish is, for both dishes, a teaspoon of vegetable puree. We are far from the vegetable trends in current cuisine. I had memories of a kitchen with more personality. Very nice service, but unprofessional for a table of this level (we did not see a maître d').

On peut observer la brigade préparer les mets dans un couloir a l’extérieur de la salle à manger.Tout était parfait du service a la présentation des plats, un festival de saveurs.Le restaurant se situe dans un magnifique bâtiment historique au centre ville de bale. Bei einem so hohen qualitativen Standard muss man nicht mehr über die Garstufe oder das "al dente" der Pasta sprechen, weil eine Perfektion der kochweise schon selbstverständlich ist. Si TripAdvisor avait 6 points cela aurait été notre note.Tout fut parfait en ce repas de samedi à midi. L’accueil, le cadre, la gentillesse et le professionnalisme du personnel (tous polyglottes)ce que l’on peut communément appeler «la classe » et .....LA CUISINE . PARFAITE !Mon épouse et moi, pourtant chanceux de pouvoir déguster des mets dans des restaurants étoilés plusieurs fois dans l’année, n’avons jamais rencontré une telle harmonie dans TOUS les plats à un point provoquant une émotion indescriptible. Matière première exceptionnelle, précision des cuissons, saveur se magnifiant, équilibre basé-acide. Certes dans un 3 étoiles Michelin il est habituel d’y rencontrer l’exceptionnel mais jamais sur tous les plats.Le Maître d’hôtel est un vrai Maître rarement pour ne pas dire jamais vu si ce n’est Monsieur Villeneuve à l’Hôtel de Ville de Crissier , c’est tout dire !Le Chef M. Knogl passe en salle à la fin du repas ce qui est toujours apprécié.Le sommelier est également très professionnel; si je devais formuler une remarque cela serait sur la carte des vins que pour un 3 étoiles MIchelin l’on attendrait plus développée notamment dans les appellations satellites afin d’y trouver des prix plus accessibles que dans les régions phares tant en France qu’en Italie. Cela étant l’amateur arrivera à y trouver son compte.En deux mots :BRAVO et MERCI.A bientôt c’est certain.
